Our Chardonnay is 50% barrel fermented; 50% stainless steel fermented. The cool fermentations take place over 4 weeks. The barrel component receives lees stirring weekly through ML, and once per month after, adding texture to the final blend. 50% of the wine undergoes malolactic fermentation, while the remainder does not to preserve freshness and vibrancy. Half the wine is aged in stainless steel, and half in neutral French, Hungarian, and Slovenian oak hogsheads.\u003c\/p\u003e\u003cp\u003eA vibrant nose filled with tropical fruit and Myer lemon, framed by a backdrop of toasty brioche and flint. On the palate, a perfect combination of both richness and freshness, with ample acidity tying it all together for a long finish.\u003c\/p\u003e\u003cp\u003eLava Cap is a third-generation family farm founded in 1986 in Placerville, California, high in the Sierra Nevada Foothills at an elevation of 2700 feet. Our estate mountain-grown grapes are sourced from some of the highest vineyards\n \n in California. Our unique volcanic soils, weathered from ancient ash flows, produce wines that are intensely aromatic and luscious with deep, rich fruit erupting with flavor.\u003c\/p\u003e\u003cp\u003eMillions of years ago, the Sierra Nevada mountains roiled with volcanic activity, and lava flowed down from the mountains, covering the foothills. Over thousands of years, much of the hardened lava deteriorated away, but select areas in the Sierra Nevada foothills still have volcanic soil, which is ideally suited to the production of fine wine grapes. The Jones family grows grapes on one of the few special volcanic sites, at an elevation of 2,700ft. The name\"Lava Cap\" reflects theunique topography of the site.
