From the late maestro mezcalero Patrón°ndez
100%Agave salmiana
Cooked in a masonry oven using steam
Combined withmosto(agave must)îthe remains from harvested pulque
Milled using traditional stone tahona
Fermented in pine vats with 30%pulque(fermented agave sap) and wild yeast
Distilled twice using a hybrid wood and copper pot still
Bell peppers and fresh leather on the nose are bolstered on the palate by the creamy lactic notes for which Salmiana is famous, and a racy edge the that reminds us it was distilled using sharp, light pulque. The finish brings us cracked peppercorns wrapped in cool, clean linen and a hint of pine. Spectacular.
