- Distilled from 100%tuna(prickly pear) sourced near the distillery in Cuicatl°n
- Fermented in stainless steel for 10–12 days using Champagne yeast
- Distilled twice in copper alembic pot stills
- Rested in glass 1 year before bottling
- Starchy and piquant aromas of taro root, fresh horseradish, jicama, and freshly julienned green apple lead to a high-toned palate of nopales underscored by candied peanuts. Sweet-tart candied hibiscus lands on a delightfully delayed finish.

The prickly pear is known in Mexico astuna(ahem – be careful not to confuse it with the fish) and is, in fact, the fruit of the paddle cactus (Opuntiaficus-indica). Savory and juicy pink bulbs blossom at the tips of the cactus leaves; the fruit is popularly used in everything from salad to ice cream. Bright and boldly aromatic,Edenico’sprickly pear unquestionably stands out amongst the most uniqueeau-de-vie in the world.
