Huaraches de Plata Blanca de la Sierra is an artisanal raicilla produced in Mascota, Jalisco. This unaged Mexican agave spirit is made from 100% Maximiliana agave. The agave plants are allowed to mature for approximately seven to ten years before harvesting. Traditional production begins by cooking the mature agave in a conical masonry oven. The cooked agave is milled using a trapiche before fermentation and distillation. Distillation takes place in a traditional copper still fitted with a coil. Its aroma combines cooked agave with sweet, herbal and mineral characteristics. Additional notes of lemongrass, pear and fresh grass contribute brightness and complexity.
