THE PROCESS: 7–8 year-old agave is harvested by hand, and then slow cooked in traditional steam ovens to a point that is ideal for mashing while retaining the natural agave flavor. After cooking for a minimum of 3 days, the piñas are left for an additional 2-3 days to cool before being mashed and distilled. The tequila is rested in American oak. Once the aging process is complete, a beautiful rich amber liquid is hatched from the barrels and decanted into a heavyweight solid ceramic bottle.
