Named for the father of Georges and Daniel Daou, Soul of a Lion is the crown jewel of DAOU, and an emblem of our quest to produce unsurpassed Cabernet Sauvignon from the terroir of DAOU Mountain. The 2020 vintage presents an alluring profusion of black cherry, mulberry and Oregon blackberry aromas with notes of leather, cigar box and dark chocolate. Hints of desert sage and cr®me de menthe accent the rich fruit. The palate is silky and voluptuous, delivering loads of currant, cassis, black raspberry and ripe cherry. Notes of fig and baking spice are underscored by earthy tones of dates and truffle. Mature, ripe tannins yield a weighty, velvety texture integrated with a limestone minerality and subtle oak. A lengthy finish leaves lingering impressions of blackberry, plum and espresso with a touch of white pepper. A wine of immense staying power that will evolve favorably for many years to come.

This wine explodes from the glass with a kaleidoscope of aromas and flavors, including blackberry, blueberry, blackcurrant, dark cherry, sweet tobacco and licorice. An added floral dimension imparts an integrated sense of elegance and freshness. While full-bodied with ultra-high phenolic levels, this wine maintains its evenness and poise through an extraordinarily long finish. Situated on a 212-acre hilltop estate in the Adelaida District of Paso Robles, this remarkable mountain was once described by Andr© Tchelistcheff, legendary winemaking authority, as "a jewel of ecological elements." DAOU MOUNTAIN: DAOU Mountain stands alone at an elevation of 2,200 feet, rising from the heart of the Adelaida District in the rugged coastal range west of Paso Robles. The steep slopes here reach up to 56 percent, with uniform exposure to the elements across the estate. It is a terroir of power, purity and symmetry, with every natural asset necessary to pursue the perfect Cabernet Sauvignonîincluding calcareous clay soils that emulate Bordeaux’s Right Bank and a climate that mirrors St. Helena.
